Today’s Sunday for the Soul is for Stacey. I’ve been thinking that it would be fun to have a little online baby shower for her — but how? Well, today is our chance to shower Stacey and Marc and Isabelle with a little love. As Stacey is adjusting to life as a new mom she is hoping to use her slow cooker a little more. Will you leave a comment with your favorite crock pot recipe? You can either leave a link to it or type it out.

As I was checking the links to share above, I came across this recipe for French dip sandwiches. I think I’ll try it next week. I’m always a sucker for a great stew; this chicken stew looks like one I should try too.
And this was in my slow cooker last week:
Creamy Chicken Italiano
4 boneless, skinless chicken-breast halves
1 envelope dry Italian salad dressing mix (except I didn’t have this, so I just combined some spices that I thought would be a good substitute)
1/4 cup water
8 oz. pkg. cream cheese, softened
10 3/4 oz. can cream of chicken soup (low fat, low sodium)
4 oz. can mushroom stems and pieces, drained
- Place chicken in slow cooker.
- Combine salad dressing mix and water. Pour over chicken.
- Cover. Cook on low 3 hours.
- Combine cream cheese and soup until blended. Stir in mushrooms. Pour over chicken.
- Cook on low 1 hour, or until chicken juices run clear.
- Serve over noodles or rice.
Later in the week I mixed the left overs with spaghetti sauce and served it again. It was a definite hit with my family (except for Sam who only eats peanut butter and jelly, cinnamon crunchie cereal, plain spaghetti, carrots, and fresh fruit).

One of my family’s favorite things is when I take some tart apples, peel and slice them, add some sugar & cinnamon, a little water (maybe 1/3 cup) and let it cook all day. When you are ready, stir and voila! Homemade applesauce – a great winter treat when you have a chicken or roast in the oven!

A little southern love coming your way. Cook some boneless and skinless chicken thighs and cut (or shred) into pieces. Place in crock pot. Mix 1 cup of ketchup, 1 quarter cup of sugar, and 1 quarter cup of vinegar and pour mixture over chicken. Cook as long as you want. Just trust me on this. Old southern recipe. I like to serve it over rice (not traditional). So happy for you!

While mine is NOT a slow cooker recipe, it IS one of my favorites…and is super versatile and FAST!

Can’t beat crockpot dinners. Here is my easiest recipe. Don’t judge the ingredients, just try it, you will like it.
3 Ingredient Crockpot Roast
Put 1 envelope of dry onion soup mix in the bottom of the crockpot. Add a boneless roast (chuck, arm, or whatever you have/like). Take 1 can of jellied cranberry sauce and scoop it out. Put on top of roast. Cover and cook all day. Do not add any liquid.
That’s it, it will create a BBQ like sauce to spoon over the very tender meat. I like to make flavored (ranch or cheesy) mashed potatoes to go with this meat.
